36 wonton wrappers
1 tbsp oil
2 cups baby spinach
2 cups tomato sauce
1 tsp Italian seasoning
½ tsp red pepper flakes (optional)
1½ ricotta cheese
½ cup parmesan cheese, shredded
1½ cup mozzarella cheese, shredded
fresh basil

Preheat oven to 350°F and spray a muffin tin liberally with cooking spray.
Press two wonton wrappers into each muffin cup.
In a large frying pan, heat oil over medium-high heat.
Add garlic and cook for an additional 30 seconds.
Add spinach and cook it until wilted, about 2-3 minutes.
Add tomato sauce and bring to a boil.
Reduce heat to low and simmer for 5 minutes.
Remove from heat and allow sauce to cool for 10-15 minutes.
In a medium bowl, combine ricotta, ½ cup mozzarella and ¼ cup parmesan.
Line each muffin cup with a wonton wrapper.
Layer one spoon of ricotta filling and one spoon of tomato sauce.
Add another wonton wrapper and repeat.
Top with shredded mozzarella, a sprinkle of parmesan and a fresh basil leaf.

24 wonton wrappers
1½ cup rice, cooked
½ cup black beans, rinsed and drained
1 cup cooked chicken, chopped
1 cup salsa
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
2 tsp hot sauce
2 cups cheddar cheese, shredded
sour cream for garnish
chopped chives for garnish

Preheat oven to 350°F and spray a muffin tin liberally with cooking spray.
Press two wonton wrappers into each muffin cup.
In a large bowl, combine rice, black beans, chicken, salsa, chili powder, cumin, garlic powder and hot sauce.
Fill each muffin cup with rice mixture.
Top with a teaspoon of salsa and shredded cheddar cheese.
Bake for 15-20 minutes or until edges begin to crisp.
Top with sour cream and chopped chives.

1 small red onion
1 celery stalk
1 red bell pepper
2 lb lean ground beef
1 egg
1 cup breadcrumbs
2 tsp steak seasoning
1 tsp Worcestershire sauce
1 cup bbq sauce

In a food processor, combine onion, celery, bell pepper and garlic until they are very finely chopped.
In a large bowl, combine vegetable mixture with ground beef, egg, breadcrumbs, steak seasoning, Worcestershire sauce and bbq sauce.
Mix well with your hands.
Use an ice cream scoop to scoop meatloaf mixture into a well-greased muffin tin.
Bake at 400°F for 30 minutes or until they have reached an internal temperature of 160°F.
Brush each with bbq sauce and bake for an additional 5 minutes.
Top each meatloaf muffin with mashed potato and chives.
Enjoy!
