This is bread heaven and you could be slicing it in just 45 minutes. You can use all white flour but I like it best like this with some wholemeal too. Have it with soup, nut butter and jam, as a sandwich or just with some olive oil and sea salt.

Preheat the oven to 200’C.

In a medium bowl, mix together the nut milk and vinegar and
set it aside.

In a large bowl, mix together the flour, coconut sugar, salt and baking soda. Make a well in the centre.

Pour the milk into the centre and with your hand in a claw shape, stir in circular movements until you have a dough, it will be a little sticky but shouldn’t be at all gloopy (if it is add a little more flour gradually).

Tip the dough out onto a floured baking tray and pat it into a round shape. Score the top with a cross using a sharp knife

Bake for about 35 minutes until golden all over. You’ll know it’s ready if you tap the bottom of the bread and it sounds hollow.

Let it cool on a wire rack before slicing.
