Copycat Olive Garden Zuppa Toscana Soup

Anyone that’s anyone knows about Olive Garden’s Zuppa Toscana Soup! It’s my favorite thing to order whenever I go there! I love the creamy broth with the spicy sausage and tender potatoes. It’s seriously delicious.

I often crave it when I’m just sitting around the house and thought, why not make this at home?! I also love making Copycat Olive Garden Pepperoni & Sausage Flatbread Pizza, too! I love taking recipes from my favorite restaurants and making them my own at home.

Why make Zuppa Toscana Soup at Home?

Making classic restaurant dishes like Copycat Olive Garden Zuppa Toscana at home makes life so much easier. All you need is a quick trip to the store and a little bit of time and boom. You have an incredible dish that tastes like restaurant quality but you made from home!

And one of the best parts? You know exactly what went into the  Zuppa Toscana Soup! You know all of the ingredients and can feel great about feeding your family something fresh from home.

How to make Zuppa Toscana Soup

  1. Dice up four slices of bacon. In a cast iron skillet, cook the bacon pieces until browned. Add one diced onion and cook with the bacon until softened.
  2. Add two cloves of minced garlic and one pound Italian sausage and break it up while browning. When that’s done, take it out and place on a plate for later use.
  3. In the same skillet, add 10 cups of chicken broth and 3 sliced russet potatoes. I quarter the slices if they’re large. Bring that to a boil for about 15 minutes or until the potatoes are softened.
  4. Pour your sausage mixture back into the pot with the potatoes, then add one 16 ounce container of heavy whipping cream to the pot. It wouldn’t be Zuppa Toscana Soup without heavy whipping cream!
  5. Next, add in 3-4 cups diced fresh kale and let that soften for a few minutes. Taste and add salt and pepper and even red chili pepper flakes if you like it spicy!

Ingredients

  • 16 ounces heavy whipping cream
  • 3 cups fresh kale diced
